During fasting month, you'll see that I prepare dishes using bananas almost every day....got it from my MIL...for whenever she comes over, she will bring along some bananas for the kids! So, the last two days I decided to prepare these 2 desserts using different types bananas....Pisang Emas and Pisang Raja...wow emas and raja, hahaha!
Kolak Pisang (that's what MIL calls this!)
Ingredients
10 bananas, I used ripe Pisang Raja
2 cups water
2 cups light brown sugar
a few daun pandan, screwpine leaves
Method
In a large pan, combine water, sugar and screwpine leaves, and bring to boil.
Add sliced bananas, leave to boil and aromatic, remove from heat. Best served chilled.
Super easy, fast and delicious dessert! Made this while waiting for iftar yesterday...shared with some friends!
Banana Bread Cobbler
Ingredients
Streusel Topping (yums!)
3/4 light brown sugar
1/2 cup self raising flour
1/2 cup butter, melted and cooled
1 cup uncooked oats
1/2 cups chopped pecans, I omitted, I was in the nick of time, it was 5 mins before iftar on Monday!
Banana Filling (I used Pisang Emas)
1 cup self raising flour
1 cup granulated sugar, I used 3/4 cups
1 cup milk
1/2 cup butter melted
4 medium bananas, I used 10 medium Pisang Emas
Method
Streusel Topping
Stir together brwon sugar, flour, and butter until crumbly. Stir in oats. I used a fork to do this. Set aside.
Filling
Whisk flour, sugar and milk until just blended. Whisk in melted butter. Pour into prepared pan. I used a 7x7 casserole dish. Top with banana slices and scatter streusel topping. Bake for about 40-45 minutes until brown and bubbly.
Hence, the pictures were taken after iftar at around 9! The dessert was delicious, too bad we didn't have any icecream in the freezer!
