It's the holiday season! Yeay to all of us! Except that I will be in the office till year end...I only have a few days left of my annual leave and my daughter has yet to finish her exams...the Malaysian equivalent of the British O-levels. So, my holidays really will be in January 2012 when I will take a few days off.
Anyway, as always we are excited over any Mactweet http://mactweets.blogspot.com/2011/11/mac-attack-25-last-of-year-seasons.html "attacks", haha! And, I 'm excited to do this for these macarons will be given away as gifts to friends who celebrate X'mas!...and what have we got here???
I have decided to make Macadamia Nut Brittle and couple this with Caramel Buttercream as fillings, and chose this lovely (but no so) champagne colour! The almond macaron shells were made using Jill Colonna's recipe, they are simply awesome!
As to how I made the Macadamia Nut Brittle...I roasted 150g macadamias in the oven for about 20 minutes, let them cool. In the mean time, I measured 150g caster sugar and melt them in a heavy based pan until they turn amber in colour, and started to bubble actively when I removed from fire, sprinkle a pinch of salt, shake the pan gently and pour this caramel on a baking paper spread on a baking tray. I then scatter the raosted macadamias and allow this to cool. Then, I blitz them in a food processor to get a finer texture. Mix them a caramel buttercream and fill in your macarons!
It was cool the day I made this macarons as it had been raining the whole day....the gloomy weather just reminded me of autumn in Aberystwth, minus the strong wind and fallen leaves, haha!

Wow! These are perfect! And I so agree that caramel is really so festive and Christmassy and paired with the macadamia nut brittle just fabulous - really like candy treats. I would love to receive a box of these as a holiday gift. And they are so perfect I need to try Jill's recipe. Thrilled to have you bake with us for the Holiday Mac Attack - and maybe you have time for another batch?
