Yeah! Let's make a Carrot Cake! Since I loved Carrot Cakes, I loved trying new recipes with different versions as well, just like trying Vanilla Cake recipes! I have read about this cake loads of times and had tasted once, when I redeemed Tina's Milkadeal Macarons and Carrot Cake. She made this in cuppies for her deal!
Well! This cake is big, definitely bigger than the recipe that I usually make and it has desicated coconut in it. I use to have an aversion with coconut, but after making Coconut Cupcakes, I loved them. And having coconut in the recipe actually makes the cake very rich, adding a punch to the entire taste of the cake but not overwhelming the general taste of a carrot cake! You must try this recipe, that's what I'm saying! Apart from this I like the part where you don't have to beat butter or oil...making the cake is very simple, just mix all the ingredients and shove them in the oven for less than an hour and serve with cream cheese topping!
So, here goes!
Ingredients (recipe adapted from Dorie Greenspan's Baking From My Home To Yours book)
2 cups all purpose flour
2 tsp baking powder
2 tsp baking soda
2 tsp ground cinnamon
3/4 tsp salt
3 cups grated carrots (about 9 carrots)
1 cup coarsely chopped walnuts or pecans
1 cup shredded coconut, I used dessicated coconut (unsweetened)
1/2 cup raisins
2 cups sugar
1 cup canola oil, I used corn oil
4 large eggs, lightly beaten
vanilla essence
Method
1. Prepare 2 (or 3), 8 inches cake tins, preheat oven at 170C.
2.Whisk flour, salt, cinnamon powder, baking powder and baking soda.
3.Beat sugar, eggs, oil and vanilla essence until smooth, I used my wooden ladle.
4.In another bowl mix the grated carrots, dessicated coconut, set aside.
5.In a large bowl add dry ingredients into the oil mixture, fold until well mixed.
6.Add the grated carrots and dessicated coconuts, last fold in the chopped walnuts and raisins.
7. And bake!
Once done, 3/4 of the cake was gone, everyone including Hajar and Muhammad loved the cake!Ha! Ha! I don't need to say more about this cake!
