I have always wanted to make these..."Friands"...err are they from France or are they from Australia, New Zealand? I'm not sure! But, I know I was free last night and I had a huge punnet of Driscolls Starwberries that I got for 50% off on Sunday from Isetan!
I also got these silicone cups from Sham, who just returned from her trip to London and Barcelona!
So, what's next other than Yani making this gorgeous Strawberry and Vanilla Friands! The recipe was from http://taste.com.au/ and the recipe was from Delicious Magazine Dec 2006 page 158, Kate Teist made this!
125g strawberries, hulled and halved, and crushed
6 egg whites...hmm...no need to worry whether you have to have a peak or not meringue...just whisk it a wee bit!
1 tsp vanilla paste, I didn't have, so, replaced with 1 tsp vanilla powder and 1/2 tsp vanilla essence!
1 1/2 cups (225g) icing sugar
1 1/4 cups (155g) almond meal
1/2 cup (75g) plain flour
150g unsalted butter, I used salted Anchor, melted and cooled
vanilla sugar for dusting...I used normal icing sugar
1.Preheat oven at 180C. Prepare baking friand tins...I used normal muffin tins and heart shaped silicone cases.
2.Melt butter, and let cool.
3.Whisk egg whites until frothy with vanilla powder (paste) and vanilla extract.
4.Sift almond meal, plain flour and icing sugar over egg white vanilla mix. Stir well.
5.Add melted butter, and mix until well incorporated. Lastly add crushed strwberries.
6.Divide amongst prepared tins and bake for about 25 minutes.
7.Let cool and dust with icing sugar.
I had one for breakfast this morning and gave two pieces to Sham, and SW...there are still 3 pieces at home! :p Love it, love it, love it!
