Lychee and Cream Cheese Macarons!

I'm always excited to see the next announcement on MacTweet...what is the next theme??!! As there is endless ways and possibilities to do a macaron! So, for MacAttack 20, the theme was Fruit Macaron..woo hoo....I was going to recreate what I have done before.....Almond Macarons with Cream Cheese and Lychee! The only other better thing this time round was that I had some fresh lychees....so they were a tad sourish and complements well the velvety cream cheese and cuts the sweetness in the shell a bit! I used one egg white recipe for this and decided that the authentic French meringue method is best for this!Simple, quick and very tasty! Hubby loved this! So...here goes Lychee and Cream Cheese Macarons!
They were really red...but nope there weren't any after taste, except divine....I used red colour powder!

Bakes and Cakes

Red Velvet Cake for Dad...tq Asmah, Asmah first ordered this cake during Milkadeal deal sometime in March! 
Purple and Marbled Purple Macarons for hantaran. Tq Nadia (hubs' cousin) for her brother's engagement gift. 
Rose Macarons for an engagement gift, tq Yong!
The small packs are to be shared with loved ones...
The 40 pieces pack are for mother of the bride and wedding gift, tq Datin Siti!

A last minute order...mama was going away to Bangkok, aunty Yani was supposed to sort out the cakes.... 
the theme was pink and black and it was a Harajuku themeed party... 
Gothic to say the least for a sweet 16 year old pretty young lady...Nurissa...hence, this cake in pink and black and some cuppies which I topped off with pink macaron shells! The party was a blast...tq my dear quirky friend Chut!

Till the next Bakes and Cakes...am slowing down in July until after Syawal...but will do waht I loved to do .....make macarons, hehe!Inshaallal...tq beutiful peeps for all the support!

Not So Giant Double Choc Cookie

Well....they might not be so giant a cookie! But they were nice enough to satisfy my craving for some thing chocolatey and the baking prowess in me......late last night! At 11 to be exact! But making these...are super easy! I didnt even use a handheld mixer, let alone my stand mixer...the old wooden spatula was good enough to execute the job!So...apa tunguu lagi! Here goes:
Ingredients
1 cup (2 sticks or about 226g butter), at room temperature.
1 1/4 cups sugar
2 large eggs
1/2 cup dark cocoa powder, I used Valrhona that SHBredow got from Germany
21/4 cup all purpose flour
1/4 tsp salt
1 tsp baking powder
2 1/2 semi-sweet choc chips...I chopped some Callebaut dark choc buttons...didn't have any choc chip handy
Method
1.Preheat oven at 160C. Prepare baking sheets with baking/parchment paper...think they God's greatest creation! Use and throw..err...am not so green!
2.Beat butter and sugar until light and fluffy...I added a tsp of vanilla essence also!
3.Beat eggs one at a time. Add cocoa powder...I didn't sieve...lazy and sleepy were the words!
4.Add sifted flour, salt and baking powder until well combined...and phleze do not beat, just fold ya!
5.Lastly add choc chips, or like mine chopped chocolate buttons! Voila...I love myself.
6.Ideally you should divide the batter into 12 portions/balls, flatten them on the baking paper and bake....but well...the lazy me just scopped a mountain tablespoon full of batter and flatten them a bit on the baking paper before baking for about 20 mins.

I couldnt wait till this morning to taste...they were so dark but darn delicious...I had mine with Nescafe, before I hit the slumber last nite!
...and guess what? They tasted even better this morning....I felt good especially when I shared this with my colleagues and SuperWomanWannabe...whom I officially crowned as my food taster, haha!Hope you liked them Shila!

Lazy Bone Weekend!

Yeah, that was me last weekend! Finished all my orders on Saturday at 6 am, brushed my teeth, washed my face and went to pasar tani! Fadhil (who takes care of the Ayer Baloi home) was coming for lunch with his family! I made Gulai Senangin, Udang Galah Goreng Titik Serai, Pucuk Paku Masak Lemak.
Bought this Tepung Pelita for dessert....
....and whipped this Hazelnut Macarons...they were overfolded, hence the shorty frills, I used Jill Colonna's recipe....not perfect as they turn out to look, but the taste was divine, I fiiled with Newtulla...haha, I mixed hazelnut paste with dark chocolate ganache....they were gone in almost a blink!
Come Sunday, I was supposed to make some macarons...but hubs and kids protested saying that they didn't want to see any mac making that day...and my...look at Muhammad, throwing tantrums and crancky in the kitchen....
all teary eyed, wanting to 'play' with my hair and just want to be cuddled....so no macaron making yesterday until all dozed off and that was 11 pm!
I made these for Izzat's birthday, Khadijah's BMF.....he loves macarons!
....and shared this with my lovely fellow bakers Sizuka and Mrs Plain June...they were far from perfect! I decided to divide my Italian Meringue batter and coloured them...the purples ones were slightly overfolded, hence the short skirt and lopsided...but hey! I loved making them and especially sharing them with loved ones! Filled with Italian Meringue buttercream infused with Yam, Coffee and Coconut!
Then, we went to hub's cousin's house for some Tahlil prayers and Father's Day celebration! So, I didn't cook lunch yesterday, and brought along this Devil's Food Choc Cake cuppies, I used Valrhona powder and buttons...and thank God they were enough to go round and gone the moment they were served!
While we chatted and watched Luqman's remixes of music videos, Khadijah played around with the Iphone4 that I gave hubs for his birthday...and came out with this collage!  Wawa...this is for you...yeah your aunty is the Kitchen Guardian! Hehe!

As promised I will be offering some macarons...I will keep to my promise, inshaallah, just keep a look out here ya! Have a brilliant, healthy and productive week ahead!

Macarons-Fast Sale!

 
Good morning all beautiful peeps! I made some macarons and have this extras to go! There are 20 macarons in a pack, which includes hazelnut and chocolate macarons (using Valrhona cocoa powder and buttons) and almond macarons with assorted fillings.... yam, coffee, coconut, salted caramel and lemon all infused in Italian Meringue buttercream...going for rm30 per pack...I have 2 packs only! Bakes and Cakes

Well! It was macarons affair for the past month! And, I can say purple is the new pink! you can see from here! As Ramadhan is approaching, the orders are quieter, but I have started getting enquiries for weddings and engagements in September! I will not be baking or taking orders for Raya cookies this year....there might potentially be some orders for hampers, but am hoping to concentrate in my Tarawikh solats in Ramadhan...and am so excited....err, I haven't finished my ganti puasa (fasting to replace the Ramadhan days that I dodged last year!) yet...and it's already Rejab....anyway.....

Trips To APSH

Almost enough of baking till the wee hours in the morning for the past two weeks, and due to school break, we decided to get Umar and Ibraheem on their joirney to adulthood....so, last Friday, I took the day off and waited for my two young men for their jouney. Dr Wan Osama a Paed Surgeon of Ampang Puteri Specialist Hospital was chosen for the task! We arrived there at around 8.30 in the morning...and I'll let this pictures do the narration......

After about 2 hours waiting, they have turned into this...worried....there were 8 similar cases that morning! Since Ib was more anxious, we decided that Umar were to go through his experience first....I don't know was Ib was thinking..... 
This was Umar, as soon as he came out from the OT..."Sakit ke?"(Was it painful?) , I asked; "Sikit jer" (Just a bit), Umar replied.....think he was overwhelmed by the whole experience! But, thank God it was done and over with!

.....while Mummy browsed this beautiful scenery in Central Park New York, in Donna Hay's magazine....how I wish....... 
The June July issues was about pies....yums! 
...and this was Ib after he came out from the OT, yes! Next would be Muhammad!
And...yesterday I had to drive Khadijah to the A&E Unit of APSH....she fractured her toe....... 
It was a spiral fracture, without any twisting, bla bla bla....nice one and no drama, not fun, not interesting (for him!)...the exact words of Dato Dr Syed Abd Latif, the Orthophaedic Surgeon....a tubalguard (or something) and rest for 3 weeks at least is good enough...... 
....phew....that made my day! I hate hospital stays, even if they were not meant for me....so lunch was this toasted wholemeal bread tuna sandwich at the UK Bakery today. I also packed sandwiches for Ib, Umar and Yusof at home today! ....wonder what I'll prepare for dinner tonight....
I also had this tart....think my Starwberry Shortbread tart is better. This tart shell is overcooked and a bit hard.....
Well....what a beginning for the week....am quite free this week, hubs had asked to keep this week free as we might go back to Ayer Baloi! ....but I have some photos to show you of what I did with the beautiful colour powder that Rima gave me last Thursday...so, wait up! I also want to try this recipe and Mat Gebu's Karipap Pusing, woot!
