Lapis Marie Cheese

I figured I should leave you with this recipe first before i upload pictures and update the post where we had fun with Chef Fatima. I have been busy to say the least! But, to let the week pass by without trying any new recipe means the week was not complete.

...and to make this delicious dessert without having to bake it, requires the least effort. Preparation is less than half hour, but you need to chill this dessert at least overnight! I have posted this recipe before after I got this from Haizad's wife who is from Kuching Sarawak!


Ingredients
1 packet Marie biscuits, plain
1 packet Marie biscuits chocolate
300ml whipping cream
250g cream cheese
250g condensed milk
about 50g shredded cheddar cheese, I used Bega

Method
Line a square 7 inch loose bottom cake tin lined with baking paper.
Whip cream cheese until light, add condensed milk, whip until well incorporated. Whip in whipping cream.
Arrange plain biscuits on the base of the cake tin, spread a layer of the whip cream condensed milk and cream cheese mix, alternate with choc marie and keep on layering till you use up all the cream mix.
I crushed the top of the cake with plain biscuits and then scatter shredded cheese on top.
Cover with a cling film, and chill in the fridge for at least one night.

My children all loved this, it was gone in two servings, haha!

Mama Dorosch's Carrot Cake

I love Carrot Cake...we all as in my family love this cake! I had a slice of this when Rima came over about 2 months ago....it was gorgeous, couldn't describe the taste in words! Yeah , I have tried a few Carrot cakes recipes, they all are lovely including this one. And they all have their own peculiar carrot and walnut and cheese tastes!

Let's go straight to the recipe, I haven't much time! But updating my recipes is a must, hehe! 


Ingredients
1 1/2 cups sugar
1 1/2 cups corn oil
 4 eggs
2 cups flour sifted with 2 tsp baking powder and 2 tsp bicarb soda and 2 tsp cinnamon (yummsss) and 1/4 tsp salt
3 cups packed grated carrots
3/4 cups walnuts
1/2 cups raising, I added


Method
Preheat oven at 160C. Prepare 2, 9 inches cake tins. Grate carrots...urrgh tak suka! Chop the walnuts, no need to roast, I didnt! Sift the flours and cinnamon and bicarb soda and baking powder and salt. Beat oil and sugar and vanilla, I added. Add eggs one by one until batter well incorporated. Add flour mix in 3 additions, fold till well mixed. lastly add carrots and walnut. Divide equally and bake for about 40 mins.

Let cool and cover with Cream Cheese icing...go figure this one ya:p

Tish Boyle's Rich Marble Pound Cake

.....just by looking of Rima's pictures of this cake I knew that I must bake this cake. And, that's what I did last night, after coming back from my class. I made this cake and a Devil's Food Chocolate Cake for Nizzar's birthday cake....in my mind was the Marble Cake slice that I used to get from the Mamak Roti who cycles around my neighbourhood when I was a kid...a slice of that cake was enough to satisfy my craving!


Ingredients
342g cake flour
2 tsp baking powder
1/2 tsp salt
500g sugar , I reduced to 300g
20g cocoa powder, and add with 90ml water to create a paste, I used Valrhona! Mix this with 3 cups batter
340g butter
1 1/2 tsp vanilla extract
5 large eggs
120ml (1/2 cup) milk

Method
1.Preheat oven at 170C, prepare cake tins. I usedmy Nordic bundt pan.
2.Sift flour with baking soda and salt.
3.Make the chocolate paste.
4.Beat butter with sugar and vanilla till light and creamy. Add eggs one by one.
5.Add flour and milk in two additions, fold till incorporated, dont beat!
6.Pour in pan, layer by layer in order to create the marble effect. Bake for about 40 minutes or until skewer inserted in the comes clean!

I had a slice the minute the cake came out from the oven.....I just couldn't resist!...and guess what it tasted better today...just had another slice before I start composing this....and Zira's Marble Cake is baking in the oven :p...tqs Rima for posting this recipe, miss you and can't wait to meet you you next come over!

A friend asked why I have been quite lately....well, i'm laden with work in the office, my right hand is suffering from using a hand-mixer for my macarons, so, am taking easy a bit with my baking and yup i'm busy with my new venture.Life is great, have a nice weekend, make this marbellous marble cake and smile :p:p:p
