Apricot Cranberry Honey Yoghurt Pots

Happy Friday you alls! I have been terribly busy lately, with office work piling and back in my kitchen  orders have been catching up as well. I'm okay, more structured this year, but yes, busy! I haven't had time to try Rose's Classic White Cake again, even though hubs has been asking where the cuppies that I made disappeared to??!! Haha, of course into the children's tummies!

I made this on Sunday....a super easy dessert that is delicious and healthy. I got the dried cranberries and apricots from this guy who sells produce from Iran at my weekly Saturday Pasar Tani....



Ingredients - Recipe was adapted from Australia's Delicious Magazine March 2012 issue
250g dried apricots
50g dried cranberries
200 ml orange juice, I squeezed from 2 oranges
3 tbsp honey
200g Greek yoghurt
50g chopped salted pistachios

Method
Cut apricot into halves, boil on medium heat along with cranberries in orange juice, until soft. Turn off heat, add honey, stir and set aside to cool.
Divide half of the portion with the juice equally among pots or dessert bowls. Spread 2 tablespoons of yoghurt on top of the mix, divide the remaining mix and top off with yoghurt and sprinkle with pistachios. Allow to cool in the fridge for a few hours, and serve!

Hubs didn't like it as he is averse to apricots, but we all loved this dessert...so, enjoy!

...err shabby and not chique....cuppies for merisik ordered by Azura, my counterpart in the other telco, hehe! Tqs Azura!


...not so angelic pie...Pavlova before being topped with Whip Cream and Berries, tqs Anuty Buntat, who ordered on Friday and again on Sunday! Woot!


It was really humid last week, resulting in this comot looking macarons (shells were oven dried), shared with Ija for our son Syahmee and special tqs Fazrain!


...Half recipe of Devil's Food Choc Cake with Choc Ganache, Cream Cheese and Berries for an up and coming DJ...Phil, my lunch companion, sometimes, hehe! Tqs Philip!


Sonic was the image they requested and they wanted Victoria Sandwich Cake. Tqs Kin!


...she ordered Red Velvet Cupcakes the week before, last week her children wanted this Rainbow Cake! Tqs Halina!

...am getting a bit of breather this weekend, but got to prepare the ingredients for macaron making for next week and have to prepare some fondant for making peonies, yes! Love them! Have a chilling and bliss weekend!xox
