Congo Bars Revisited, Reminiscing Aber!

You know, I can never get over the fact of how things happen when you are part of the blogosphere community....for me this blogging thingy is another world of its own! ....and I find such joy meeting and making friends with the lovely peeps behind their blogs! I am known as Kitchen Guardian, you know...and I love it!

I have always admired 4cakesinacup...their bakes are lovely! One day I received an FB message saying that she and her sister love the bakes in my blog, yadayadayada...I replied by saying that I hoped I have inspired them to cook or bake....little that I realise that they are the proprietors of 4cakesinacup....blergh...I was so blur! We have since become friends in this virtual world, they write on my wall, and I write on their wall on FB!

So.....I have to make some Congo Bars for Johan, Superwomanwannabe's son...he doesn't mom and dad's Congo Bars, but Auntie Yani's! So, this and inspired from 4cakesinacup version of Congo Bars, I decided to make Congo Bars early this morning, with Caramel Candy in addition to the Choc Chips in the batter!
Ingredients
2 3/4 cups all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup butter
1 3/4 cups light brwon sugar, I used 1 1/2 cups
1 tsp vanilla extract
3 large eggs
2 cups dark choc chips
2 cups chopped Werther's Caramel Candy
Method
1.Sift flour, baking powder, salt and set aside.
2.In a large bowl combine butter and sugar and vanilla extract until butter disappears.
3.Add flour and mix well...do not stir!
4.Scatter the choc chips and chopped caramel candy.
5.Spread the batter on a 13x9 pan, bake at 160C for about 30 minutes.
[I should have lined my pan with baking paper as I had some difficulty lifting the cut pieces due to the melted candy sticking to the bottom...anyway...next time!]

This, compared to the original version....mmmm...I had a piece for Sahur this morning....love it, love love it more than the original version....well! I might be biased as I loved anything that has caramel, toffee, butterscotch in them!

When making the Congo Bars, I remembered this Welsh Fudge Shop! During my days in uni, they serve pancakes and different types of fudges....am drooling.......it was my hang out place when I got my scholarship....

And, here's some snapshots of the Treflyon Halls of residence where I spent my final year of uni...studying very hard my Law Degree, serious! My room, then was overlooking my Law Department, that alone reminds me to be serious in my studies, hehe! Yes , I did! There were 5 of us, I was the most senior, who shared a common kitchen, and 2 bathrooms.....ah well...for those who inspire to study in Aberystwyth!
